Easy Sausage Breakfast Cassarole!

This dish is wonderfully comforting and can be made overnight for your special weekend breakfast/brunch. It's super easy to make and kids love it! It is very versatile and fun to make. For mine, since I made it for a pot luck , I stuck to the traditional ingredients (egg and sausage), but really, you can substitute them with almost any ingredients, such as mushrooms, potatoes or ham.
Ingredients:
7 large eggs
1 large red onion
1 medium green pepper
Sharp cheddar cheese (grated, 1c)
Parmesan cheese (grated, 1c)
4 slices of bread (wheat or white, cubed)
Sausage (cooked, chopped to small pieces 1/2 lb)
Salt and Pepper (a few pinches)

Step 1: Preheat the oven to 350 degrees.
Step 2: Chop up the pepper and onion to small pieces.
Step 3: In medium heat, saute sausage, green pepper and onion together in some vegetable oil. Turn off heat and set the pan aside when it's ready.
Step 4:  Whisk egg and add both cheeses. Then, mix in cooked vegetable and sausage.
Step 5: Grease a square casserole dish, layer diced bread in the bottom. Pour egg mixture over the top. Spread it out all over. Sprinkle a few pinches of salt and pepper.
Step 6: Put dish into the oven carefully when the oven is ready. Cook for 30 minutes until it's golden brown! The smell should make you pretty hungry. Serve immediately or serve the day after (refrigerate overnight - Reheat in microwave for about 2 to 2 and 1/2 minutes). Enjoy the lovely day!!
